Summer will start with ingredients endorsed by the Rainforest Alliance and the Beer Master Class, hosted by the Hawkshead Brewery.
Now in its third year, the Lakes Hotel School Food Festival 2010 will be opened, as always with the food of Yannick Lequitte, followed by menus from Richard Axford and Paul Waring on the Wednesday and Thursday. During the afternoon guest speakers will showcase the products they have developed and give you the opportunity to question the experts and taste their wonderful products.
During the Festival, evening diners in the Lakes Hotel School will experience food coordinated by some of the region’s top, award-winning chefs. In recent years this has included Simon Rogan of L’enclume, Stephen Doherty of First Floor Cafe, Mark Walters of the Old England, Nigel Howarth of Northcote Manor, Jason ‘Bruno’ Birkbeck of Hipping Hall, and Nigel Mendham of the Samling
On Thursday 29th April the Culinary Team will host a dinner with no bill. At the end of the evening you will only pay for your drinks and what you feel the dining experience was worth. The profit from this event will aid the Culinary Team on their end of year visit.
May will bring an array of seasonal ingredients to the Lakes Hotel School. Due to the short seasons of some key ingredients we will be maximising the freshness and quality of some of the County’s finest ingredients. These will also be served at a hospitality employers’ network dinner, where the talents of competing students will be showcased to the key employers in the region’s hospitality and tourism industry.
On Wednesday 26th May a banquet will take place for 80 of the Higher Education students currently studying degree courses at Kendal College and, along with their lecturers, they will be celebrating the completion of their courses.
The end of the year brings a return of classical cuisine, food created by the masterchefs of a bygone era.
In June luncheon will be served for one week only and will include local asparagus and rhubarb from the Yorkshire Triangle.
June will also witness the final push as the chefs and food-service staff complete their qualifications.
As well as College open days there will be an opportunity for aspiring chefs to whet their appetite with a taster day with Simon Hansen, Richard Axford and Yannick Lequitte. This event is designed to attract more young people into the glorious hospitality and catering industry.
